Okay so I don’t know what this restaurant is, but I suspect this is part of a multi course dinner. They do this so you can enjoy each course in its fullness without overeating. Not to mention the virtues of always leaving them wanting more.
The thing with specialty food and gourmet meals is that you really don’t want too big a portion. The taste can get overwhelming after a certain portion. That’s my experience anyway, from whatever experience I have eating food served like this.
To a degree, I can relate. Many, many moons ago, for high school senior prom, we went to an upscale French restaurant just outside of Washington, DC. L’Auberge Chez Francois. 7 course meal, with each course enough to feed a hamster. Food was phenomenal. We’re talking sweet carrots hand cut into magnificent shapes. By the end of the dinner, I felt full but not bloated, unlike having a dinner at an Italian grandmothers house.
Back to relevancy, the guy looks like he’s graduating high school. We learn, we grow, with each new experience. It looks like this poor kid got exploited for his reaction to trying/experiencing something new.
This restaurant is D.O.M in São Paulo. It was recently one of the 50 best restaurants in the world and the chef/owner is featured in an episode of Chef’s Table. The dish in video is the last of the tasting menu and despite its initial small portion, you can request for as many extra portions as you’d like.

never experienced it in one of these ridiculous kinds of places.
There is a bit of flim-flammery when dealing with rich people. As long a they can say there are people that can’t afford this, they’ll pay more. Silver service is just meat and three veg served to tossers.
The bear steak i ever had was at a local pub. Reasonably priced, cooked perfectly, I could almost cut it with my fork. I went to a fancy restaurant and the steak was served on a piece of slate, with wanky veg, and exceptionally average.
What is it? Dessert?
The waiters dropping ingredients on his pan thinking to themselves:
“Fuckin dumb ass.”
