I’m suprised I was even able to think of one, because everything I thought of you already had (RoR2, Terraria). I suggest noita, it’s a rogue like game with an incredible amount of depth (figuratively and literally).

Its an Action Adventure/3D Platformer which took Inspirations from Dark Souls, Zelda and Mario.
Bit its not hard like Dark Souls.
Its actully pretty easy but still fun and engaging.
That makes it great fore relaxing.
