It’s been a while since I did the last one. I had some major changes in my life both good and bad. I spent a month in South Africa, changed jobs, went through a breakup, and had to move.
The Previous Countries, the earlier ones were a bit rougher, it is a learning process.

What everything is starting with the top right
A salad someone brought.
A boil up: pigs tails, whole snapper, sweet potatoes, potatoes, plantains, bananas, boil cakes that have been boiled. Normally also has cassava but I had trouble finding it.
A rum cake, I might have made it too strong
Fried plantains
Beans and rice that someone brought.
A Belize Breeze
Chimole: A chicken stew made with mole paste, it was suppose to come out a lot darker.
Tres Leches that someone brought
Pibil: Marinated pork wrapped in banana leaves and slow cooked for several hours.
Homemade torillas that someone brought.
For the book I read *Becoming Belize: A History of an Outpost of Empire Searching for Identity* by Mavis C. Campbell. As the name describes it is about the early colonial period. It was the only non travel guide book I could find about Belize.
For a second I though this is Belize’s school lunch.
Are you cataloguing/sharing the recipes?

Everything fits except Tres Leche which is Mexican but great job , those are some hard dishes to replicate , the rice and beans look perfect 👍🏼 your chimole looks very close , where did you find the black recardo?

I found your idea lovely, and we started doing it with my SO, doing our third one (albania) this weekend
(we don’t have the exact same order because we’re using the french names of countries)
It’s a cool project you’ve got going, OP. How do you manage with sourcing the ingredients? Some of the things might be difficult and/or expensive to find, I immagine.
