one thing that’s not mentioned, which is also true of franklin BBQ, the briskets they use, that are fully cooked in 12 hours, have a final cook weight of about 6lbs. and so if you buy those from the store, they would be about 9 or 10lbs, at most.
that’s why they cook in 12 hours, and why they don’t use crazy high temps.
