Convection is one of the fundamental processes for how heat (thermal energy) can move between two points in space over time. It is characterized by the physical motion of matter that carries the thermal energy in its bulk state. If A is “hot” and B is “cold”, then if “hot stuff” physically moves from A to B while “cold stuff” moves from B to A, then A will “cool down” and B will “heat up”.
How convection occurs depends on the thermal and fluid properties of “the stuff”: viscosity, thermal conductivity, etc… as well as the physical properties of the system: depth, gravity, turbulence, etc…
If the material properties are right and the bottom of the liquid is flatish / smoothish / uniformish and there aren’t any external disturbances, etc… then the warm liquid will have a lower density than when it’s cool, causing it to rise due to buoyant forces, displacing the cooler fluid, which sinks, and this will occur just so as to produce columns of rising fluid bounded by it’s falling, cooling counterpart.
The hexagons are an emergent property of close packing cylinders in a plane, and they form as the material cools and solidifies. There are many examples of this happening in nature, and while I’m not certain (I’m not a geologist) I am reminded of the structures you see in cooled igneous flows such as
