Most racers just need need you to ham on the trigger to accelerate. Just cruise around Mexico in FH5.
Power Wash Simulator also relies a ton on the right trigger. And there’s no pressure to be fast about anything, so you can fumble around with the controller without screwing anything up.

Rimworld is gonna be pretty decent for you to play like this
Hearthstone. You literally need to he able to move a mouse, and click the button. You can play with your foot and click with your big toe.
Really, pretty much anything turn-based. XCOM series is pretty great.

Try looking up halfcoordinated. Gamer who has cerebral palsey and plays most games one handed.
The diablo games maybe?. Its point and click and you might get by with one hand on the mouse.

FTL: Faster Than Light
Final fantasy 7 if you can handle the graphics (the remake isn’t 100% complete yet so I wouldn’t recommend it anyways and probably can’t be played with 1 hand with the new combat mechanics from modernization anyways.

Civilization VI is great. I’ve got like 500 hours in it so you’ll have plenty to play. The anthology pack (base game + all dlc) is pretty cheap atm (or really cheap if you use sites like kinguin). All you need is a mouse. Sounds like a perfect solution for you 🙂

Less of a game than it is an experience, so in terms of using the controller you don’t need much dexterity at all.
